BEYOND the grand, Romanesque pillars of this award-winning Neston restaurant is a markedly down-to-earth heart. Bolete's charm rests on the talents of a very determined and unlikely restauranteur.
Bolete (pronounced bo-leet), which opened in 2023, is the creation of “mainly self-taught” chef Shaun Woodage and former solicitor Kayleigh Stapleton.
The restaurant offers lunch, dinner and a Sunday menu with highlights including panko pork chop, spatchcocked peri peri poussin and their famous hispi cabbage with tofu and chilli crisp.
The owner-operators have been a couple for 12 years and left their “corporate world” jobs to dive headfirst into the restaurant business at an exceptionally volatile time in the industry.
But the gamble has paid dividends; in just a few years, Bolete has become a roaring success, receiving several mentions in the Good Food Guide, including a coveted spot in the list of Britain’s top 100 local restaurants.
